40 Clove Garlic Chicken

Ingredients:
40 cloves of garlic - skin on or off (Aldi brand of pre-peeled, the whole bag)
1 package of chicken drumsticks (Aldi brand - *my family prefers drumsticks so I use 2 packages instead of the thighs
1 package of chicken thighs (Aldi brand - 6 pack) * original recipe calls for bone in chicken breast, but we didn’t have any
3 tbsp of salted butter
3 tbsp of olive oil
4 tbsp of lemon juice (about 2 lemons)
salt
pepper
oregano
italian seasoning
garlic powder
onion powder
Instructions:
Preheat oven to 325 degrees.
In a dutch oven (or LARGE high sided, oven-safe pan) melt butter and oil over medium high heat.
Add garlic and chicken pieces. Sear chicken until a light brown, about 2 mins each side. I find it best to do about 4-6 pieces at a time and then move to the side of the pan so I don’t burn the garlic.
Once chicken and garlic is browned, season with salt, pepper, garlic and onion powder, oregano and italian seasoning. *My mom says once you think you added too much seasoning, add more. Use tongs to flip and get the other side.
Add lemon juice and about 1/4 cup of water to the pan. The water should NOT cover the chicken, just go halfway up sides. Put the lid on the pan and put in the oven for 2 hours MINIMUM, but I like to do 3. *If you want to cook longer you can also transfer to crock pot.
Be sure to check each hour to make sure water level is halfway up the chicken, add more water if necessary.
Should come out deep brown and golden. Chicken should fall off bones/apart and garlic will be like butter (BUTTAH).
Serve with your choice of sides. Our favorites are potatoes (any style) and corn, broccoli or green beans.
